Waverly Location

Foxcroft Food & Wine Waverly, located in South Charlotte’s Waverly community, offers Modern American cuisine, fine wine, and genuine hospitality.

Named to Charlotte Magazine’s Best Burgers list, we pair seasonal dishes with 40+ wines by the glass, curated wine flights, and hundreds of bottles available to enjoy here or at home. Our culinary team crafts everything in-house with locally sourced ingredients, from small plates and artisanal cheese boards to fresh pastas and charcoal-fired entrées prepared on a rare Josper Charcoal Grill.

Our knowledgeable team is here to guide you to a familiar favorite or something new. Guests can also enjoy frosé and a chilled beer from our rotating beverage list. Experience exceptional wine and dining in South Charlotte in our inviting dining room, or on our covered patio. Join us for monthly wine dinners, tastings, and pop-up events!

Our Waverly Team

Lindsay Dukes

General Manager

Lindsay is new to the Charlotte dining scene but brings over 10 years of hospitality experience from Charlottesville, VA, and New Orleans, LA, where she spent the last six years. During her time in New Orleans, she rose into management at the Ace Hotel, running multiple bar programs and curating wine and cocktail lists for four restaurants and bars. She also earned her Level One Certification from the Court of Master Sommeliers. Her passion for wine continues to grow, and she believes it should be approachable and fun, especially when helping people discover what they enjoy. In January 2025, Lindsay helped open two new restaurant concepts, building out their wine and bar programs before continuing to manage day-to-day front-of-house operations. She loves being hands-on during service and treats every night like a party she is hosting, making sure every guest leaves happy.

Lindsay moved to Charlotte in late 2025 to be closer to family. In her free time, she enjoys being an aunt to her nieces and nephews, spending time outdoors with her dog, reading, doing puzzles, enjoying a good pot of tea, and adding to her prized collection of cardigans and sweaters.

Randolph London

Executive Chef

When cooking, he draws on experiences that began with his roots in East Texas, which he calls one of the best melting pots of cuisine in the country. After circumnavigating the globe in the United States Navy, it was seeing how food brought people together, transcending cultural and language barriers, that led to a passion for the food and hospitality industry. For over a decade he worked in the front-of-house, with some intermittent stints in kitchens, then seriously committed to his passion of cooking by attending Le Cordon Bleu in Austin, TX in 2014. Having cooked in San Diego, Austin, and New York City, he has spent several years cutting his teeth in the Charlotte culinary scene. He is thrilled to join Foxcroft Waverly  and see what kind of Mediterranean inspired fare he and his team can create!

In Memoriam - Executive Chef 

William Peterson

Will spent his childhood cooking in the family kitchen with his mom and cooking and baking with his grandmothers. His culinary journey was always centered on cooking meals for friends, family, and loved ones and how his food brings people together. Will followed his passion for cooking to Johnson and Wales University where he earned both AS and BS degrees in Culinary Science graduating in 2017. Will's mission at Foxcroft Wine Co. Waverly was to simply cook and create exceptional dining experiences for guests. He appreciated their trust and confidence in the Foxcroft Culinary brand and worked diligently to uphold the high standards set by all Foxcroft locations. In November of 2023, Will suddenly and tragically passed away due to a blood clot. We are devastated by the loss of a talented and wonderful chef and friend.

The Chef William-Allen Peterson Culinary Arts Foundation honors Chef Will’s enduring legacy by empowering aspiring young culinarians through scholarships, education, equipment, and training. We nurture secondary and post-secondary school culinary arts talent in underrepresented communities, transforming passionate individuals into the next generation of culinary arts & sciences specialists and professional chefs.
