Domaine Notre Dame des Pallières Sablet Rouge “L’Olivet” is a classic Southern Rhône red that pairs the ripe, generous character of Grenache with the darker, more structured profile of Syrah. The wine is vibrant and approachable, with layers of red and dark fruit, subtle savory notes, and a smooth, well-rounded texture. Traditional winemaking keeps the focus on the fruit and the character of Sablet, making this an easygoing yet expressive bottle to enjoy with a meal or on its own.
"Bright and smoky nose with herbal nuances, really engaging. Full-bodied, rounded and ripe, so quite opulent for a Sablet. There's a good sense of tension, ripe tannins, ending with a fruit-filled, peacock's tail of a finish. Pretty glorious! 40-year-old vines, hand-picked, destemmed."
