For over 70 years, Germans have been refining the production of non-alcoholic wines, leading to significant quality improvements. Recent advancements in vacuum distillation, particularly a new patented closed system developed by a producer in Rheinhessen, allow the alcohol in wine to boil at just 28°C. This process better preserves the wine's natural aromas and characteristics. Just as fat carries flavor in food, alcohol serves a similar role in wine. In its absence, residual sugar takes on this responsibility, though it is nearly balanced out by the wine's acidity.
